Shrimp Scampi Recipe


This is a great recipe for a romantic dinner with your loved one along with a glass of good wine!


cook and prep time: 20 minutes

Ingredients:

1 tsp. olive oil

5 ea. 13/15 P&D raw tiger shrimp

2 oz. unsalted butter

2 oz. vegetable stock

1 tbsp. fresh minced garlic

1 oz. fresh minced shallots

1 oz. grape tomatoes, halved

3 oz. white cooking wine

1 cup cooked plain brown rice

½ lemon juiced and seeded

1 pinch to taste kosher salt

1 pinch to taste black pepper

1 tsp. shaved or shredded parmesan cheese for garnish

1 tsp. chopped scallions for garnish


Method:

1. In a sauté pan, heat oil over medium high.  Add shrimp and cook until firm and light pinkish color for 2 minutes.


2. Add butter, garlic, shallots, tomatoes, salt & pepper.  Cook for about 2 minutes.  Add white wine and cook until wine is reduced by halved. Add the vegetable stock, lemon juice, season with salt & pepper and simmer for 2 more minutes.


3. Transfer to serving plate.  Serve on white ramekin (bowl) along with steamed rice and seasonal vegetables, garnish with parmesan cheese and scallions.


Chef’s Tip:

Feel free to replace the brown rice with your favorite grain or pasta.
